Ground Beef and Cabbage Casserole

Ingredients:

* 1 to 1 1/2 pounds lean ground beef

* 1/2 cup chopped onion

* 1/2 cup chopped green bell pepper

* 1 can (14.5 ounces) diced tomatoes

* 1 teaspoon salt

* 1 teaspoon garlic powder

* 1 head cabbage, about 1 1/2 to 2 pounds

* 3/4 cup shredded mild Cheddar cheese

Preparation:

Directions for cabbage casserole with ground beef

In large skillet, cook ground beef, chopped onion, and chopped green pepper until meat is no longer pink; drain off fat. Stir in tomatoes, salt, and garlic powder. Simmer, uncovered, for 10 minutes, stirring frequently.

Cut cabbage into 6 wedges. Cook cabbage in a small amount of boiling salted water, covered, for about 10 minutes and drain well. Arrange cabbage wedges in a lightly buttered 9-inch square baking dish. Pour ground beef mixture over and around the cabbage wedges. Bake cabbage casserole, uncovered, at 350掳 for 20 to 25 minutes. Sprinkle cheese over cabbage casserole and bake about 5 minutes longer.
Fried Cabbage

Ingredients:

2 head of cabbage

6 slices salt pork (about 1 to 2 inches in length)

Bacon Drippings--1/2 to 1/3 cup

2 small onions

1/2 large green bell pepper

red pepper flakes (to taste)

salt

pepper

Put about 1/2 inch of water in a large pot, place the salt pork and red pepper flakes in the pot and simmer slowly about 15 minutes. When the water begins to evaporate pour about 1/4 cup bacon drippings in pot. Slice the onions and bell peppers in thin strips and place in the drippings.

Remove the outside green leafs from the cabbage heads, rinse and lay them in a pile together on top of one another. Slice the leafs in coleslaw type strips and place in the simmering bacon drippings and cook until they begin to wilt and soften .

Cut the rest of the cabbage head in half and slice the same way as the outside leafs. Rinse and place in the pot after the large leafs have begun to cook.

Cook for 1/2 hour or to your preference for doneness. Sprinkle with the salt and pepper

Rick's Cabbage Salad

Ingredients:

2 packets almonds (1/3 cup each)

1 can crushed pineapple

1/2 regular cabbage

1/2 purple cabbage Dressing:

3 Tbsp. sugar

1/4 cup vegetable Oil

1 tsp. sesame Oil

1/2 tsp. salt

3 Tbsp. rice vinegar

Cooking Instructions:

Preheat oven 350 degrees. Roast almonds 10-15 minutes or until lightly brown, set aside. Julienne cabbage and mix well in large container. Mix oriental dressing, better to double for your liking, best put in empty bottle or salad dressing shaker. Before serving, mix all ingredients and add can of pineapple (Best if chilled). If can find, add 1 package of Nissin ramen noodles, orange stripe with little chick on left bottom corner of package.

Additional Comments:

Better to refrigerate the can of pineapple and cabbage before serving and have the dressing in a empty bottle and if can put the almonds in a zip lock bag with a packet of absorbent to keep it from sogging, mix all ingredients right before serving and watch the faces, I used to hate cabbage til I ate this.
Get some beef like stew meat, add potatoes, carrots, onion, and seasoning and enough water to cook. When meat is almost done add cabbage cut into at least quarter head size or smaller. Cook until everything is done. You could do this in the crock pot also.

If you would rather have a salad, slice cabbage very fine, add chopped carrots, a little onion or green pepper (optional). Use a little mayonnaise , cold slaw dressing, or miracle whip to moisten

I make cabbage and noodles. I use the shredded cabbage in a bag that you can buy to make cole slaw. Heat 2 T. olive oil and 2 T. butter in a pan and add your cabbage. Cook it, covered until it's soft. Cook some klusky noodles in salted water and add to the cabbage. Season with salt and pepper, and maybe a little garlic. Your cabbage will cook down, so make sure you don't make more noodles than cabbage.

Have you ever tried cooked red cabbage?

Thinly shred 1 head of red cabbage. In a pot, add 2 cups of vegetable stock and 1-2 cups of red wine. Salt and pepper to taste. If you prefer it sweet, add 1/4 cup of black or red currant jelly. Be sure to add 2 Tbsp. of apple cider vinegar before it cooks, otherwise it will turn blue!

Bring to boil and then simmer for 45 minutes to 1 hour. It's a fat-free and healthy side dish that can be served hot or cold.

You could also do a Corned Beef and cabbage. Just put corned beef in roasting pot with potatoes, onions, carrots, celery, and cabbage. Bake in the oven like a roast or crock pot if you like. The crock pot is easier but I like it in the oven.
try frying them lightly with balsamic vinegar and little sugar. it tastes nice.

    I cook my onions and bacon brown, add some garlic, caraway and a bay leaves, a bit of vinegar, and stock, then the head of either shredded or chopped cabbage stir it around, put a lid on a turn down the heat and let it cook slowly, it takes 1-2 hours even in a crockpot is a good idea, then as you getting ready for service, I brown my german style weiners (ones with a bit of spice and natural casings), I lightly brown them add them to the cabbage, it is best to sort of manoever them into it.

    Let them heat through for at least 20 minutes, and I serve it family style on a big platter or on a plate, a side of home fried potatos or even Potato salad is nice, for the broth you can add beer or wine.Germans,is there such a recipe with cabbage and wieners?
    Wieners mit Saurkraut und Kartoffel-

    Put a can or jar of saurkraut in including the juice in a oven proof dish. Place a package of wieners, hot dogs, Kielbasa or whatever semi-cooked tubular shaped sausage that you have on top of the saurkraut. Then bake for about 30 minutes @ 325 degrees F. Serve with mashed potatoes.

    If you want to get fancy, add some caraway seeds to the saurkraut prior to placing the sausage on top.Germans,is there such a recipe with cabbage and wieners?
    Ja. Wurst mit Sauerkraut. :)

    Ingredients

    * 8 German sausages (bratwurst, mettwurst, weisswurst, blutwurst, bockwurst, etc.)

    * 1 large yellow onion, peeled, halved and sliced into half-moons

    * 8 slices bacon

    * 1 tart apple

    * 1 c. each: apple cider and chicken stock

    * 1 bag or jar sauerkraut (please don't use that nasty metallic canned kraut!)

    * 1 t. caraway seeds

    * salt and pepper

    Directions

    1. Rinse the kraut!

    2. Fry the bacon in a large pan. Remove the bacon and drain it, leaving the drippings in the pan. Over medium heat, cook the onion in the bacon drippings until soft.

    3. Core and shred the apple and add the shredded apple to the pan, then add the rinsed kraut. Nestle the sausages in the kraut, then add the caraway, cider and stock. Crumble the bacon and add it. Bring to a boil, turn the heat down low, and simmer for an hour, uncovered, turning the sausages from time to time, until the liquid is nearly evaporated.

    4. Pile the kraut onto a platter, then place the sausages on top and serve with a good, hot mustard, and a good dark rye.
    ever heard of hot dogs and sauerkraut?
    Well, I'm not German but ah, brats and kraut? Haven't you ever heard of it? And I imagine there are many variations on such.

    Cabbage and Leek Soup

    When not on shift, Welsh miners enjoyed working in the open air on their allotments or cottage gardens. Almost all grew leeks and cabbages, so this fresh green soup could almost be called 'Miner's Soup'. Serves 6

    Chicken stock - 1.2 litres (2 pints), or vegetable stock

    Leeks - 8, trimmed, washed and chopped into 2 cm (half inch) pieces

    Green or Savoy cabbage - 1.25 kg (2 lb), hard stalks and outer leaves removed, chopped into 2 cm (half inch) pieces

    Onion - 1 large, finely sliced

    Salt and freshly ground black pepper

    GARNISH: Slices of toast - 6, each cut into 12 squares

    Cheddar cheese - 75g (3 oz), grated

    In a large saucepan, bring the stock to the boil.

    Drop in all the vegetables.

    Bring back to the boil, then cover and simmer for 45 minutes, stirring occasionally.

    Add salt and pepper to taste.

    Ladle into 6 bowls, allowing enough vegetables in each to show just above the surface of the liquid.

    The soup can be served just as it is, or each bowl can be garnished with 12 squares of toast, sprinkled with grated cheddar cheese.
