My wife just made me some delicious haluska.

Precook a cup of dry egg noodles or small bow tie macaroni in salted water, per package directions. This should make about two cups of cooked pasta.

Prepare 1 finely chopped small to medium onion and separately shred a half head of cabbage.

Melt about a tablespoon of butter in a large skillet and add the onion. Cook slowly over no more than medium heat until it gets clear. Do not brown.

Add another tablespoon of butter and the cabbage and a sprinkle of salt. It will look like a lot of bulk, but once the cabbage gets limp, it gets a lot smaller. Continue to saute' over medium heat until the cabbage is just tender and just beginning to brown on a few edges.

Add the drained pasta and another tablespoon of butter and and sautee' a little longer until there is a little browning scattered throughout. Taste and add salt if needed. This is about 4 servings.

That's it. Hot buttered cabbage and pasta with nothing much else except for onion flavored butter. Simple comfort food that is good for you and a traditional lenten fare.

Goes good with scrambled egg, too.

Some delicious recipes would be:

*A hearty salad- You make that by combining cabbage, chopped up hard boiled eggs, sprinkling on some cheese, and some toasted sliced almonds. You can also put on some light salad dressing.

*Another type of salad- You make that by putting a dollop or two of cottage cheese on a cabbage leaf. To finish it off place one or two slices of peaches on.

*A fruity salad- You make that by mixing cabbage in with pomegranate seeds, strawberry slices, and sugared toasted sliced almonds. You can also add a light salad dressing.

1 cup white vinegar

3/4 cup vegetable oil

1 tablespoon salt

1 tablespoon dry mustard

black pepper to taste

Directions:

One of my favorite cabbage recipes is totally vegan, so you may like it.

I cook the leaves of cabbage separately... boiling them until tender.

I then cook a small amount of jasmine or brown rice or pilaf by putting the rice in a bowl, measuring the rice, and adding two parts water to one part rice. This allows me to make as little or as much as I want without having to go by a certain recipe... I also add a teaspoon of olive oil to keep the rice from sticking, and place it in the microwave for about 5 minutes full power. I then stir and place it in there again for 10 minutes on half power. I stir again and add some fresh squeezed lemon juice. If I am using a small box of rice pilaf, I will use a whole lemon. I also add at this point finely diced onion, about one very small one...about the size of an egg...and chopped fresh parsley or cilantro. I will let it cook at half power until all of the water is absorbed into the rice. I will then add a bit more olive oil into the rice, and will add either pine nuts, or raisins. or both ...

I will then take the cooked and cooled cabbage, and stuff them with the rice mixture and roll them into finger shaped wraps.

Place these into an oven safe pan or casserole dish.I will place some water in the bottom of the pan along with the coursely chopped lemon rinds. This will give the wraps even more lemon flavor. These are a great snack or dinner hot or cold. They are wonderful to dip into hummus or taboule.

If you want to be daring, try this... no lemon.no parsley or cilantro..(but add allspice or cinnamon and nutmeg to the rice mixture and add both the raisins and pine nuts. and use sweet onions that you saute until caramelized or sweet red peppers roasted in the oven then chopped finely to the rice mixture and wrap as above).. cook in the pan with a bit of water and a touch of rosewater... and a bit of agave nectar drizzled over the top and a touch inside before you wrap up... an interesting taste and sweet to boot!
